鱼肉在几分钟内便可成熟 , 来学这道简单健康的的烧烤快手菜吧 。

Ingredients(原料)四人份
4 cups shredded green cabbage (from head cabbage)
四杯切碎的卷心菜
Coarse salt and ground pepper
粗盐、磨碎的胡椒
1 celery stalk, thinly sliced
一根芹菜杆 , 切薄片
1/2 small red onion, thinly sliced
半个小红葱头 , 切薄片
3 tablespoons mayonnaise
三茶匙蛋黄酱
1 tablespoon red-wine vinegar
一茶匙红葡萄酒醋
1/4 teaspoon caraway seed
1/4茶匙藏茴香籽
Vegetable oil, for grilling

4 striped bass fillets (or other firm-fleshed fish, such as tuna, tilapia, or salmon), 4 to 6 ounces each

8 thick slices sandwich bread, such as brioche or country-style white

Directions(步骤)
1. In a bowl, toss cabbage with 2 teaspoons salt; let stand 20 minutes. Press between layers of paper towels to remove excess liquid. Toss cabbage in a clean bowl with celery, onion, mayonnaise, vinegar, and caraway seed and season with pepper.
碗中放入卷心菜 , 放两茶匙盐 摇晃卷心菜 , 静置20分钟 。 之后用几张厨房用纸才吸走卷心菜的水分 。

【烤鱼三明治配卷心菜沙拉】2. Heat grill to medium-high. Clean and lightly oil hot grates. Pat fish dry with paper towels; season with salt and pepper and brush with oil. Grill fish on one side until opaque at edges, 2 to 4 minutes. Using a thin spatula, flip fish and cook until opaque throughout, 1 to 5 minutes. Transfer to a plate.

Cook's Note (烹饪小贴士)
Patting the fish dry with paper towels is crucial for preventing it from sticking to the grill. Always use a wide spatula to move the fish (never tongs or a grilling fork) and turn the fillets only once.
用纸巾沾干鱼的表面的步骤非常重要 , 可以防止鱼肉粘在烤架上 。
